Chocolate Raisin Muffins Recipe

I love making a variety of muffins for my family to enjoy and this Chocolate Raisin Muffins recipe is from my 80 year old great aunt. I try to make a batch of these muffins about every 8 weeks and they are fantastic warmed up and served with your morning coffee. You can use any type of nuts that you would like. We sometimes use chopped peanuts, pecans or walnuts...whatever I have on hand.

Chocolate Raisin Muffins Recipe

1 cup all-purpose flour
2/3 cup granulated sugar
1/4 cup powdered cocoa
2 tsp. baking powder
1/2 tsp salt
1/2 cup milk
1/4 cup vegetable oil
1 large egg, lightly beaten
1 cup raisins
1/2 cup chopped nuts

Combine dry ingredients in a glass bowl, add milk, oil and egg, stir until just moistened. Fold in raisins and nuts. Fill paper muffin lined cups one-half full with batter and place in microwave cupcake or muffin baker. Microwave on high for 2 to 2 1/2 minutes, turning twice. Repeat with remaining batter until muffins are done. Adjust microwaving time according to your microwave so watch them closely. Serve warm.
