Homemade Chocolate Date and Walnut Fudge Recipe

Here is a great fudge recipe for all of you chocolate, date and walnut lovers out there! When making fudge I do recommend that you use a candy thermometer to ensure your fudge making success.

Chocolate Date and Walnut Fudge Recipe

1 cup granulated sugar
1 cup brown sugar
3/4 cup milk
2 tbsp. light corn syrup
2 squares (2 oz.) unsweetened chocolate
3 tbsp. butter
1 tsp. vanilla extract
1/3 cup chopped pitted dates
1/3 cup chopped walnuts

In a large saucepan combine together the sugars, milk & corn syrup. Chop the chocolate and add to the saucepan. Cook the mixture slowly, stirring constantly over medium-high heat so that mixture comes to a boil. You want to check your mixture with your candy thermometer and continue boiling it until it reaches 236 degrees F. Remove from heat and stir in the butter, vanilla extract, pitted dates and chopped walnuts. Pour mixture into a well greased 8" by 8" baking dish. Let it cool and harden before cutting it into squares.

Check Out This Site For Some Great Kid-Friendly Recipes

I love cooking and baking for my family but I am not a great cook when it comes to preparing food dishes and recipes for kids. You see...my daughter is 26 years old so it has been decades since I had to prepare kid-friendly recipes. Now that I am a grandmother to a 2 1/2 year old little girl...I have been scouring the web looking for recipes that are kid-friendly.

I found Relish.com and was very impressed with their selection of recipes! They have kid-friendly cookie recipes, cake recipes, vegetable recipes, picnic recipes, main dish recipes and all kinds of tasty looking dessert recipes! My grand daughter loves veggies so that is not our problem here in our house...however, she is not fond of any type of meats so I have to look for other ways to get the protein into her diet that she needs.

Relish.com is really easy to navigate and they have simple and easy to make recipes that you can easily incorporate into your child's meal plan. I like that their recipes include photos which is always helpful. I was browsing their holiday recipes since the holidays are quickly approaching as I like to menu plan weeks in advance. I found several great looking recipes that I am going to print out.

If you are looking for some kid-friendly recipes I hope you will visit their web site as I think you will be just as impressed as I am with their selection of great recipes. Happy cooking and baking!

Product Review | Delicious Beef Jerky from Dublin Jerky

Today I would like to introduce you all to the company called Dublin Jerky based out of the great state of Michigan. The Dublin Jerky is made from their own secret family recipe for over 30 years! This company has the largest variety of jerky that I have ever seen! You will find various flavors of beef jerky, turkey jerky, buffalo jerky, chicken jerky, pork jerky, venison jerky, elk jerky and they even have exotic jerky like ostrich, rabbit, kangaroo, pheasant, duck, alligator, antelope and wild boar.

Wow...if you love delicious jerky then Dublin Jerky is the place to purchase it because they have over 62 delicious varieties of jerky! You can purchase jerky from Dublin Jerky in 1/4 lb., 1/2 lb., 3/4 lb. and then by the pound up to 10 lb. bulk size bags!

My Review: Troy at Dublin Jerky was very generous to send us several packages of jerky to review. I will be breaking these down into smaller reviews and posting them over the next couple of weeks. This past Wednesday I hosted a party here at my home for my mother's 65th Birthday and had over 20+ guests in attendance. I decided to serve some of this delicious jerky to my guests and get their feedback on it.

The Apple Jack Beef Jerky is made with apple cider and Jack Daniels. This jerky was a favorite among all of the girls at the party. They all remarked about how moist, juicy and flavorful this jerky was. It is not dry, hard, brittle or scratchy as you swallow it. It has a beautiful tasty chewable consistency to it...exactly how fine jerky should be! Wait until you see how large and thick these jerky pieces are!!!

The Ghost Chili Beef Jerky is made with Ghost Peppers which is the world's hottest chili pepper. This jerky was a HUGE hit with the older men at our party. This jerky has a moderate-high spicy pepper kick with just a hint of garlic to it. I didn't try this one but the men raved and raved about this jerky! Just like the previous one...moist, juicy, flavorful with a nice "spicy hot" kick to it. This makes a great jerky for tail gaiting parties, sporting events, football parties, etc. when all of the guys are together snacking during the game!

The Kobe Beef Jerky is made from 'fine' Kobe beef and has a beautiful marbled texture that is rich in taste. This was one of my husband's favorite jerky's that we tried. He said it's a great everyday jerky and that you can tell it is made with finer cuts of beef than regular beef jerky. Just like the previous ones...moist, tasty, not dry, not brittle and with this one...he said you really need to take your time eating it so that you can appreciate the fine quality of it. After a few bites...he hid the rest of this pack from our guests as he wasn't sharing it with them! LOL

The Teriyaki Beef Jerky was mine, my sister, my daughter and my mothers favorite one that we tried that night! We absolutely loved the Teriyaki soy sauce taste with this one! It was sweet but you could definitely taste the soy sauce...perfect combination for a very flavorful, moist, juicy beef jerky! In the photo that is my mother "hogging" down her large piece of Teriyaki Beef Jerky!

Overall Impression: We have nothing negative to say about these 4 varieties of jerky that we got to review! They are all delicious! This company knows how to make tasty beef jerky...this is not the kind of dried up, dehydrated, scratch your throat and break your teeth type of jerky that you find at your supermarket store. This is gourmet beef jerky done the right way! Everyone at my mother's birthday party told us that they have never had better jerky and all of them requested that I give them Dublin Jerky's web site address before they left. Seriously folks...this is FANTASTIC jerky!!!! We give the jerky 10 stars out of 10 stars!
Purchasing Information: You can purchase over 62 different varieties of jerky directly from Dublin Jerky's web site online! I guarantee you will LOVE this jerky! This jerky would make a great holiday gift so don't forget to order some for all of the folks on your holiday gift list this year!

Over the next couple of weeks I will be posting additional reviews featuring the great products sold by Dublin Jerky. In addition...one of those reviews will have an attached giveaway so you can try to win a few packs of their delicious jerky! Keep your eyes open for that post later next week!

I would like to thank Troy with Dublin Jerky for sending me and my family all of this delicious jerky to review for all of you. We highly recommend this company and their wonderful products to you and your family! You can follow Dublin Jerky over on Facebook and/or on Twitter.

Product Review | Whale Tails Tortilla Chips

Today I would like to introduce you to the foodie company called Whale Tails Tortilla Chips who makes a variety of tortilla chips that taste out of this world! Seriously folks, I don't think I have ever had better tasting tortilla chips, ever! All of the ingredients that go into making these tortilla chips is 100% natural...so you can feel good about snacking on these chips and feeding them to your family for snacks. All of their tortilla chips are in the shape of a whale's tail which I think is super clever!

My Review: The company sent me a large box packed full of individual serving bags of their Whale Tails Tortilla Chips in 3 different flavors. We received the Original Flavor with Alaea Red Gourmet Hawaiian Sea Salt, Organic Blue Corn infused with Chia and the Hawaiian Barbecue Flavor tortilla chips. Each bag ranges from 130 to 140 calories per bag/serving so they are a great choice for those who are watching their weight.

Last night I held a Birthday party for my 65 year old mother and I decided to open up the bags of Whale Tails Tortilla Chips and serve them to our party guests. I told all guests that I was reviewing this product and wanted their feedback on them. Everyone and yes...I mean everyone...loved them! Different people had different favorites...my hubby loved the Original Flavor with Alaea Red Gourmet Hawaiian Sea Salt along with my 26 year old daughter. Myself and my sister picked the Hawaiian Barbecue as our favorite and my mother, 2 nephews, grand daughter and aunt all went for the Organic Blue Corn with Chia tortilla chips. If you ask me, there wasn't a bad flavor in the bunch! I would be perfectly happy to eat any of the 3 flavors on any given day!
These tortilla chips are flavorful, crunchy, have a nice texture and taste fantastic! You do not need to serve salsa, dips or spreads with these tortilla chips because they are flavorful enough that you don't need those fatty extras to add flavor to them. Like I said, they are perfect to be served alone! They are great to serve at parties, pack into your workplace lunches, school lunches or take them camping & hiking!

Overall Impression: My family LOVES the Whale Tails Tortilla Chips and the company now has several brand new customers! These tortilla chips are the best that I have personally ever eaten and I plan on buying more bags of these and stocking up my pantry because they are a wonderful snack food! I just need to find a store around here that sells them and if not, I will purchase them online as we can't live without them!

I would like to thank Whale Tails Tortilla Chips for sponsoring this product review. Your snack food products are absolutely fantastic and we highly recommend them to others! You folks need to go out and purchase a few bags of Whale Tails Tortilla Chips today!!!

National Coffee Day: Tips for a Better Coffee Brew by KRUPS

Did you know that today is National Coffee Day? In today’s caffeine driven society, more and more coffee consumers are taking the time to learn how to create stronger brews and get their fix. KRUPS, premier provider of coffee and kitchen appliances, knows a thing or two about brewing a strong cup o’ Joe, and in honor of this beloved holiday, has put together 10 tips for getting the most out of your beans.

Tip 1 - Buy Better Beans: No, we don’t just mean the more expensive bag in the coffee aisle. Fresher beans equal better coffee, so look to smaller, independent coffee shops that stock beans that are roasted on the premises or nearby. Quality establishments will stamp your coffee with its roasting date, so you know you exactly how fresh your coffee is. Coffee taste peaks from 1-3 days after the roast, and if stored properly will last up to two weeks.

Tip 2 – Store Correctly: Contrary to popular belief, you should never store beans in a freezer or a refrigerator. Coffee actually absorbs aromas from surrounding foods, and freezing the coffee will alter oil properties affecting taste. KRUPS recommends transferring whole bean coffee into an air tight container after opening, and storing in a cool, dry and dark place.

Tip 3 – Do it Yourself: Freshly ground coffee makes a world of difference, as beans start losing flavor immediately upon reaching the grinder. Grind beans yourself right before you brew, and pay attention to the coarseness of the beans, as different filter shapes require different textures. For example, mesh filters require a coarser grind, while paper filters require a finer grind, and espresso requires grinds that are almost of a sugar-type consistency for optimum flavor.

Tip 4 – One for Good Luck: KRUPS recommends measuring ground coffee out to equal one tablespoon of grinds per 5 oz of water, plus one heaping scoop at the end for good measure.

Tip 5 – Water Works: The quality of the water being used is extremely important. KRUPS recommends using cold, filtered water, especially if your tap water is not of good quality or emits a strong odor or taste. Since coffee is 98% water, the taste of the water will come through in the brew.

Tip 6 – Don’t Hesitate: Brewed coffee should be enjoyed immediately, as it will begin to lose its optimal taste mere moments after brewing. Coffee should never be left on an electric burner plate for longer than 15 minutes, or it will develop a stale, burnt taste. If not served immediately, coffee should be poured into insulated containers and used within the hour. KRUPS insulated internal tank system on the Cup on Request machine avoids this issue, and the brand’s Thermal Carafe Machines also eliminate the need for transfer, as the pot itself can be removed from the plate immediately after brewing. As a rule of thumb when using Thermal Carafes, KRUPS recommends running hot water in the carafe prior to brewing, otherwise, the cold stainless steel will cool down the liquid much too quickly.

Tip 7 – Become a Coffee Connoisseur: Much like a fine wine, coffee should be enjoyed with all the senses. Take note of acidity, aroma, bitterness, body and nuttiness. For in depth coffee tasting, or “cupping” tips, check out the guide from CoffeeCuppers.com here: http://coffeecuppers.com/Formal-Home-Cupping.htm

Tip 8 - Quick Sips: KRUPS recommends drinking smaller, more frequent servings (about 1/4 cup every hour). Research shows that caffeine works best in small, frequent doses, and a large cup can actually lead to a crash.

Tip 9 - Butt Out: Studies show that caffeine combined with Nicotine intake significantly reduces caffeine's staying power. Nicotine suppresses the effect of caffeine, cutting some of its stimulating properties in half.

Tip 10 – Cat Nap: Since it takes about 20 minutes to feel the effects of coffee, and sleep is the only solution to really offer a feeling of restfulness, the best way to get that second wind is by drinking a cup, then taking a quick nap while the caffeine sets in. You’ll wake up feeling alert and refreshed!

We would like to thank the great folks over at KRUPS for sharing their coffee brewing tips with all of the Shakin and Bakin Foodie Blog readers!

When I was a little girl I can remember my grandmother and my aunt spending time in the kitchen baking up some delicious dessert cakes and this Lord Baltimore Cake Recipe was one that was handed down to me by them. It is a delicious cake...sweet and moist and makes the perfect cake for dinner parties, tea parties and family get-togethers.

Add alternately with milk to creamed mixture. Add in the vanilla extract. Pour into 2 greased 9" layer cake pans. Bake in a preheated 350 degree oven for 35-45 minutes or until done. Let cake cool and then turn out layers onto a wire rack.

Canning Recipe | Blackberry Jelly Recipe for Home Canning

Here is another great recipe from my grandmother who canned all year long and this was her favorite blackberry jelly recipe. I can remember spending many July's out in her backyard picking the fresh blackberries so that she could make jelly and pies. You will need your waterbath canner to make this recipe.

Blackberry Jelly Recipe for Home Canning

2 quarts of fresh ripe blackberries
4 cups granulated sugar
1 (3 ounce) box of powdered pectin

Wash your blackberries and remove caps and stems. Do not use any blemished berries! Crush your berries in a food processor or blender and then place them into a jelly bag and squeeze out all of the juice. You will need 3 cups of blackberry juice. Discard the pulp into the trash or throw it out for the birds.

Pour juice into a large saucepan and slowly cook it over high heat, stirring constantly. Once it reaches a boiling you will want to stir in the granulated sugar and powdered pectin. Mix well and bring back up to a boil again, stirring constantly and boil it for 1 minute. Remove pan from heat and skim off any foam. Quickly pour the jelly mixture into sterilized 1/2 pint jelly mason jars. Place rings and lids on top and process them in your water bath canner according to your canner's instructions for jam/jelly making. If processed properly they will keep for up to 1 year in your pantry.

We Enjoy Fine Wine With Our Nightly Dinners

My husband and I enjoy home cooked meals 5-6 nights a week here in our own home that we personally prepare. I guess you could say that we totally enjoy cooking and baking with one another. (although we hate to clean up our cooking messes!).

After working all day long, we enjoy sitting down to the table and enjoying great food with a nice glass of fine wine to go along with it. Our wine tastes change from week to week. Some weeks we like a good red wine and then on other weeks we enjoy a good white wine. We like to try out different wines from the United States and different wines from around the World.

We like to buy wine online because we can find so many different types of wine from all around the world and have them shipped straight to our front door. This is a great time saver for us to be able to shop online instead of running around shopping at retail stores for wines we most likely wouldn't be able to find in those type of stores.

I also like purchasing wines to give as gifts to friends and family members for wedding gifts, anniversary gifts, birthday gifts and even for holiday gifts. I think it is always nice when you slide a good tasting wine into a pretty gift bag along with a few wine accessories and give that as a gift...people we know love getting wine gifts from us!

Do you enjoy a good glass of wine with your dinner? If so, what kind of wine do you like? I would love to get some suggestions from my readers on some new wines for hubby and I to try out.

Delicious Homemade Watermelon Banana Juice Recipe

Looking for a great homemade juice recipe that only takes 3 ingredients to make? Besides being easy to make...it's healthy for you! It is good all day long but we prefer having it in the morning with our breakfast. Here is how we make our homemade Watermelon Banana Juice.

Homemade Watermelon Banana Juice Recipe

Ingredients:

3 to 3 1/2 cups cubed watermelon chunks
2 bananas (peeled and cut into halves)
1/2 teaspoon granulated sugar (optional)

We cut down our watermelon into manageable chunks and we cut our bananas in half. We place the watermelon chunks into our juicer machine and then our halved bananas. Once the have been turned into juice we pour the juice into two 8 oz. chilled glasses. I drink my juice without the added sugar but hubby likes a 1/2 teaspoon of sugar stirred into his.

This is a fabulous healthy juice and you can juice it up ahead of time. We often make a pitcher full of it and just keep it in the refrigerator (for up to 3 days).

Homemade Brown Sugar Fudge Recipe

Here is a blast from the past! This is a vintage 1960's fudge recipe and back in the late 1960's brown sugar fudge was very popular! This flavor of fudge is rarely available in the retail market anymore so if you like brown sugar fudge you more or less have to make it yourself at home. I do recommend that you use a candy thermometer to ensure your fudge making success.

Homemade Brown Sugar Fudge Recipe

3 cups light brown sugar
1 cup evaporated milk
1 1/2 tbsp. butter (not margarine)
1 1/2 tsp. vanilla extract

Combine the sugar and evaporated milk in a large saucepan and bring to a boil, stirring constantly with a rubber spatula. Once it starts boiling start checking the temperature of the mixture with a candy thermometer. The mixture is done once it reaches 236 degrees F on your thermometer. Remove from heat and stir in the butter and vanilla extract. Beat mixture with an electric mixer for 3-4 minutes or until it starts to firm up. Pour mixture into a greased 8" by 8" baking dish. Let it cool for 1-2 hours before cutting it into squares.

Robert Rothschild Farm Cherry Pomegranate Habanero Sauce | Review & Giveaway

Today I would like to introduce you the company called Robert Rothschild Farm. This company began as a family found business in Urbana, Ohio over thirty years ago and they are known for making delicious gourmet food products like dips, preserves, mustards, sauces, salsas, sweet toppings, delicious mustards and gourmet condiments.

You can purchase their gourmet products directly from their web site store and in retail establishments across the nation. You can find entertaining ideas and delicious easy to prepare recipes directly on their web site.

My Review: Today I am reviewing the Cherry Pomegranate Habanero Sauce from Robert Rothschild Farm. This sauce has the sweet taste of cherries and pomegranate mixed with the heat of the Habanero pepper. You can use this sauce to marinate or baste your favorite meats, poultry and/or fish or use it in a dessert recipe like I did. The sauce is all-natural, gluten-free and kosher.
I received 2 recipe cards with my bottle of sauce so I decided to make their Apple-Cherry Walnut Crisp recipe (although I didn't use walnuts as I am allergic to them). You can find that recipe on the Robert Rothschild Farm site. I prepared the recipe according to directions and placed my baking dish into the oven and baked it at 375 degrees for 45 minutes. Once done I removed the pan from the oven and served the crisp to my family for dessert. I was a little worried that the "heat" from the Habanero peppers would be too much but I was pleasantly surprised that the sauce was more sweet than heat! My family chowed down on the crisp and all of them commented that they loved it more than my regular crisp recipe. I have some of the sauce left so I am going to use the remaining sauce as a marinade on some chicken wings and grill them up tomorrow. Overall we are very pleased with this sauce. Don't let the Habanero's in the sauce scare you as the sauce is definitely more sweet than heat and it added a wonderful flavor to our apple crisp. We highly recommend this delicious sauce to you!

Purchasing Info: You can purchase a 12 fl. oz. bottle of Cherry Pomegranate Habanero Sauce directly from Robert Rothschild and at retailers nationwide for around $9.19 a bottle and it is worth every dime!!!

Delicious Red Candy Apples Recipe | Easy to Make!

During the fall season we enjoy going out to our local apple orchard and picking some apples. Once we return I like to make some homemade candy coated apples for my family and this is the recipe I like to use. I got the recipe from my great aunt about 25-30 years ago and to this day...it is the recipe I use!

Homemade Candy Apples Recipe

6 large red apples
2 cups granulated sugar
1/2 cup light corn syrup
3/4 cup water
red food coloring

Wash and dry your apples. You want to use ONLY apples that have no blemishes. Insert wooden sticks into the stem end on each apple. In a large saucepan combine together the granulated sugar, corn syrup and water. Cook mixture slowly over medium heat, stirring constantly until the sugar is dissolved. Add several drops of food coloring to the mixture so that it turns a bright red. Continue to cook mixture slowly until it reaches 300 degrees F (use a candy thermometer). Once it has reached temeperature remove the pan from the heat. Dip and twirl apples in the candy mixture and then place them on wax paper or a silicone lined baking mat to harden. Once hard store them in an airtight container or wrap in plastic wrap.
