Chex Cereal Chocolate Snack Mix

A few years ago I started making this cereal snack mix for my family as we love chocolate, peanut butter and when those ingredients are mixed together with Chex (tm) cereal...it's ohhhhh soooo good!

Some people call this recipe 'puppy food' or 'dog food' for humans! Here at my house...we call it Chocolate Cereal Snack Mix.

You can find the Chex Muddy Buddies Snack Mix Recipe ----> HERE

I like to make this snack mix up in big batches and then store it in one of my Tupperware (tm) snack canisters as it will last (fresh) a long time if its properly stored. All of the kids in my family love it when I make this recipe and share it with them.

If you love a lot of chocolate (like me) try using the Chocolate Chex (tm) flavored cereal or use the regular Chex (tm) cereal and add a little extra chocolate chips.

Chocolate Dipped Town House FlipSides Pretzel Crackers

My family loves chocolate and we love those Town House Flipside Pretzel Crackers so I decided one evening to melt some of my Baker's Dipping Chocolate and dip the pretzel crackers into it. Oh my gosh....they are totally delicious! The perfect blend of sweet and salt with a little crunch!

Chocolate Dipped Town House Flipsides Pretzel Crackers

1 tub of Baker's semi-sweet dipping chocolate
20 Town House Flipsides Pretzel Crackers
waxed paper or nonstick silicone baking mat
(optional) chocolate sprinkles

Cover a baking sheet with a nonstick silicone baking mat or a sheet of waxed paper. Melt the tub of Baker's Dipping Chocolate according to package directions using your microwave. Stir the chocolate until its completely melted and has no more lumps.

Dip 1/3 to 1/2 of your pretzel cracker into the melted chocolate, hold it over the tub so that the excess drains off and back into the tub. Lay pretzel cracker onto your waxed paper and sprinkle with chocolate sprinkles if desired. Place your tray into the refrigerator for 20 minutes to help the chocolate harden. Remove from the tray and store them in an airtight container.

Homemade Chocolate Dipped Marshmallows Recipe

I have been purchasing those tubs of Baker's Semi-Sweet Dipping Chocolates and just love them because they are so easy to use! In just a few minutes you can make your very own chocolate dipped marshmallows which are so delicious! You can find the Baker's Recipe ---> HERE

When I made mine, I inserted wooden toothpicks into them so that I could easily dip them. Once they were cooled, I just pulled the toothpicks out. Instead of using colored sprinkles like they used, I left some of mine plain and some I used chocolate sprinkles.

I plan on making them again next week but I am going to dip them into semi-sweet chocolate and then drizzle white chocolate over top.

Baked Tuna Salad Melt Sandwich Recipe

If you enjoy eating cold tuna sandwiches for lunch, you will really enjoy this baked tuna melt sandwich recipe. When I make this recipe, I really load on the shredded cheddar cheese as we love a lot of cheese on them.

You can make these in your conventional oven or in your toaster oven.

Baked Tuna Melt Sandwiches

1 can tuna, drained
1/3 cup reduced-fat mayonnaise
1/8 cup onion, finely chopped
3 hard boiled eggs, chopped
1/2 cup sour cream
Cheddar Cheese, shredded (about 1/2 of a bag)
2 hamburger buns

In a medium sized bowl, combine all of the above ingredients together, except for the cheddar cheese until well blended. Split the 2 hamburger buns so that you have 4 halves. Spread the tuna mixture evenly on the bun halves and sprinkle the cheddar cheese on top. Place them on a baking sheet and bake in a 350 degree oven or toaster oven until they are bubbly and hot, approximately 10 minutes.

San Giorgio Baked Macaroni and Cheese Casserole Recipe

Here at our house, we love to eat Baked Macaroni and Cheese a few times every year. This time around, I decided to try the recipe that is printed directly on the back of the San Giorgio (tm) elbow macaroni box.

Note: I did do a minor substitution. The recipe calls for 4 cups of shredded cheddar cheese. However, I used 2 cups of mild cheddar and 2 cups of sharp cheddar cheese and mixed them together to come up with my 4 cups of cheese. I also added a 1/4 cup of seasoned bread crumbs to the top of my casserole.

Macaroni and Cheese Casserole Recipe

1 package (1 lb. box) San Giorgio Elbows, uncooked
1/2 cup butter or margarine
1/2 cup all-purpose flour
salt and ground black pepper to taste
5 cups of milk (I used whole milk)
4 cups (16 oz.) shredded cheddar cheese (see my note above)

Cook pasta according to package directions. Heat oven to 350 degrees F. In a large saucepan over medium heat, melt the butter. Blend in the flour, salt and pepper; gradually stir in the milk. Cook constantly until the sauce begins to thicken and mixture begins to boil. Slowly add in the cheese, stir until all of the cheese has melted. (I found it best to use a nonstick silicone spatula for stirring the cheese). In a 3 quart casserole dish, stir together the cooked pasta with the cheese sauce. Bake in a preheated 350 degree oven for 30 minutes or until hot and bubbly.

This recipe makes 8 to 10 servings.

2 cups water
1 cup salt
4 teaspoons Cream of tartar
4 tablespoons oil
food coloring

it can’t be stirred anymore. Let the mixture cool down to room temperature. Divide the dough and knead in food color. Store your playdough in Tupperware snacks cups to keep it from drying out.

Baker's Chocolate Truffles Candy Recipe

I absolutely love chocolate truffles but usually avoid making them as I am a messy truffle maker. However, I came across a coupon and a recipe for Baker's Black Tie Truffles and decided to give truffle making another try. You can visit the Baker's Web Site for additional recipes ---> HERE

The recipe calls for 1 tub of Baker's Real White Dipping Chocolate, however...I couldn't find it at the grocery store so I got the milk chocolate.

Black Tie Truffles Recipe

1 pkg. (6 squares) Baker's Bittersweet Baking Chocolate
1/4 cup whipping cream
1 tablespoon butter, softened
1 tub (7 ounces) Baker's Real White Dipping Chocolate (I substituted)

Microwave the chocolate squares, whipping cream and butter in a medium sized microwaveable safe bowl on the high power setting for 2 minutes, stirring after 1 minute. Stir until chocolate has completely melted. Cover and freeze for 1 to 2 hours or until firm enough to handle. (It only took an hour for me)

Use 1 teaspoon to scoop chocolate mixture into 24 round balls, each about 1 inch in diameter, place them on wax paper covered baking sheet. (I lined my baking sheet with the Tupperware Nonstick Silicone Baking Mat). Freeze for 20 minutes.

Microwave dipping chocolate as directed on the package. Carefully dip each ball in chocolate, then return to baking sheet. Drizzle with any remaining chocolate or decorate with chocolate sprinkles. Refrigerate for 30 minutes or until firm.

My tip: I inserted a tootpick into each ball and held that to dip them into the melted chocolate. Once they were firm, I just pulled the toothpick out.

These truffles were easy to make and very deccadent! YUMMY!

4 tablespoons butter
1/2 cup brown sugar
1 tablespoon Simple Indulgence White Chocolate Amaretto Dessert Blend
6 bananas, peeled and sliced
1/4 cup dark rum

Place butter and brown sugar in the Tupperwave (tm) 3 quart casserole, cover with the 3/4 quart casserole cover and cook for one minute in the microwave on the high setting.

Remove from microwave and using the silicone spatula, gently stir in the seasoning, bananas and rum. Cover again and cook an additional 6 minutes in the microwave on the high setting or until bananas are glazed and softened.

Easy Soft and Chewy Banana Bread Cookies

I didn't have time to bake some homemade banana cookies from scratch for my hubby to take to work in his lunch so I cheated and purchased one of those boxed banana bread mixes. I mixed up the batter according to the box directions and instead of pouring the batter into my loaf pan, I dropped it onto a baking sheet in large spoonfuls and made large chewy banana bread cookies. (aka cookie shaped mini banana bread).

I was pleasanty suprised at how well this worked out. They were soft, chewy and very moist :) If I ever do it again, I think I will throw in a cup of chocolate morsels since we enjoy chocolate with our banana flavored baked goods.

Homemade Pizza Dough Recipe

When it comes to making a homemade pizza, the dough making is the hardest part. If you are like me, you don't like the taste from store bought pizza crusts so you make your own.

This recipe is the one I like to use and it does take some time to make but, it will be well worth your efforts. I think it tastes just as good as the crust you get at your local pizza shop.

Pizza Dough Recipe

1 1/8 cups of warm water (not hot)
3 cups all-purpose flour
1 1/2 tablespoons powdered milk
2 teaspoons granulated sugar
1 1/2 teaspoons table salt
2 teaspoons butter, softened
2 teaspoons of active dry yeast
Pizza toppings of your choice
nonstick cooking spray

In a large mixing bowl, mix together the flour, powdered milk, granulated sugar, salt and softened butter. Make a well in the center of your dough and place the active dry yeast down into the center of the well, covering the well with additional dough. Let sit for 1 minute and then add in the 1 1/8 cups of warm water. It is very important to make sure your water is warm and not hot as you don't want to kill the yeast. Mix up the ingredients in your bowl using only your hands for approximately 3 minutes.

Cover your bowl with plastic wrap and a clean dish towel. Place bowl in a warm are of your kitchen and allow the dough to rise for 30 minutes. Remove dough from bowl and knead for 1 minute. Cover with a clean cotton towel and allow it to rest for an additional 15 minutes.

Lightly flour your dough board and roll out into a large circle or rectangle (depending on the shape of your pizza pan). Lightly spray your pan with nonstick cooking spray and place your crust on top. Prick your crust with a fork in several places. Top your crust with sauce and your favorite pizza toppings.

Bake in a preheated 375 degree oven for 20 to 25 minutes or until crust is golden brown and cheese is bubbling hot.

Homemade Holiday Eggnog Recipe

When it comes to making homemade eggnog for the holidays, this is the recipe that I use because you cook the eggs which makes it a lot safer than using just raw eggs. This recipe makes a very rich and creamy eggnog for your holiday parties.

Holiday Eggnog Recipe

12 large eggs
1 1/4 cup granulated sugar
1/2 teaspoon table salt
1 teaspoon ground nutmeg
2 quarts cold milk
1 cup dark rum (optional)
2 tablespoons vanilla extract
1 cup heavy whipping cream

In a large saucepan, using a wire whisk, beat the eggs. Slowly add in the granulated sugar and salt until all 3 of the ingredients are well blended. Gradually stir in half of the milk (1 quart) and cook over low heat, stirring constantly until the mixture thickens and coats the back of a spoon. This will take approximately 25 minutes. Your mixture should reach 160 degrees F, but don't let it come to a boil as that will scorch it.

Pour the mixture into a large mixing bowl and stir in the dark rum, vanilla extract, ground nutmeg and the remaining milk. Cover the bowl and place into the refrigerator until well chilled. (This will take 2 to 3 hours).

In a small mixing bowl, use an electric mixer set at medium speed, beat the heavy whipping cream until soft peaks form; gently fold the whipped cream into the chilled custard mixture.

Pour the eggnog into a large 5 quart punch bowl and sprinkle ground nutmeg on top.

This recipe will make 15 one-cup servings.

Dijon Roasted Potatoes Recipe

When it comes to making this recipe, we like to use red potatoes, but if you don't have any, you can certainly substitute white potatoes. If you don't enjoy the taste of garlic, you can omit the minced garlic. If desired, you can add salt and pepper to taste.

If you have picky eaters at your home, try this potato recipe, my nephews who are 9 and 11 love it...so hopefully your children will too!

Dijon Roasted Potatoes Recipe

1/3 cup Dijon Mustard
2 tablespoons olive oil
1 clove garlic, minced
1/2 teaspoon Italian seasoning
6 medium red potatoes, cut into chunks

Mix all ingredients except potatoes in a bowl. Place potatoes in greased baking pan. Pour mustard mixture over potatoes, toss to coat. Bake at 425 degrees for 35-40 minutes or until potatoes are fork tender, stirring occasionally. If desired, add salt and pepper to taste.

Easy Lemon Pilaf Recipe

We love having rice along with our dinner here at our home. I probably make some type of rice dish once a week. This Lemon Pilaf recipe is great served along with chicken, turkey or fish. (Hubby loves it served along side Lemon Pepper Chicken).

Lemon Pilaf Recipe

1 cup celery, chopped
1 cup onions, chopped
2 tablespoons butter
3 cups cooked white rice
1 tablespoon lemon peel, grated
1 teaspoon salt
1/2 teaspoon black pepper

Saute celery and onions in butter until tender. Add rice, lemon peel and seasonings, toss lightly. Continue cooking over low heat for about 2 minutes or until heated, stirring occasionally.
